Dinner tonight

On the way home, I asked snailstichr what she wanted for dinner.

She suggested pork chops.

Here is what she got.

4 thick cut pork chops
1/2 cup wild rice mix
2 small apples, cored and chopped medium
1 medium onion, chopped medium
3/4 cup flour
salt and pepper
1/4 cup molasses
1 T cinnamon
2/3 c raisins
1 T butter
2 T Olive oil

Prepare wild rice according to directions.

Slit each chop, then coat with flour, salt, pepper.

In sauce pan with 2/3 c water, add apples, onion, raisins, molasses and cinnamon.
Simmer for 15 minutes, until apples are slightly softened.

Mix rice and fruit mixture.

Melt butter with olive oil in skillet over medium heat.

Stuff fruit and rice into pocket in chops.  You will probably have extra.
Cook chops, about 10 miuntes per side.  After you flip the chops, put extra fruit rice mixture into skillet.

If the juice is a bit runny, thicken with floor.

Serve to snailstichr and prepare to accept applause.
