Adventures with leftovers

Yesterday, since we were home on a Sunday afternoon, snailstchr cooked for me, making a nice roasted leg of lamb with a freshmint and vinegar sauce.  She informed me that I had dinner tonight, using the leftovers and I had to do something more than just reheating the lamb.

So I got whole wheat thin Pizza crusts, fresh spinach, Kalamata olives, feta and Mozzerella cheese, and premade Alfredo sauce.  To the Alfredo, I added the juices in the Tupperware, and used that as the pizza sauce, then Mozzerella as the bottom cheese.  (Bottom cheese is an important structual element in making a proper pizza.  It glues the toppings to the crust. )  Then layers from the bottom up of spinach, lamb, kalamata and sliced garlic (3 cloves per pizza).  Then a mix of crumbled feta and Mozzarella.

Yummy Greek inspired Pizza.
