snailstichr  had handed me a recipe for Moroccan Vegetable Stew that she had gotten from AARP.

Since that seemed like a good start to a meal, I googled a Moroccan Lamb Stew to go with it and found this one

I did the stew out of leg of lamb rather than shoulder, as that was easily available. 

I learned about ras el hanout, a Moroccan spice blend.  IT seems that every family has a slightly different version.  I made this one:

The early step involves heating seeds and peppercorns in a dry frying pan until they become aromatic.
It is a wonderful scent to inhale.

I will be trying a number of other Moroccan recipes in the month to come to use up the batch that I made.

Both dishes were served over couscous.  It was wonderful.   snailstichr approved.  I heartily recommend both recipes.  I admit that I am posting this mostly to be able to refer back to to it so ads to find the recipes again.  But I hope my friends try them as well.
